...the NES cart called (I think) "Little League Baseball"?  I'm pretty sure it was made by SNK.  It was another very solid performer when it came to on-field dynamics.

Also, what was that game where you could, say, hit a pop-up that cast multiple shadows, or hit a line drive that's momentum carries any fielder that gets in its way all the way back to the wall?  You had a limited number of times you could do this, though, so you had to wait for the most opportune moments.  That game was a riot when played against a buddy.

Sounds a lot like NFL Blitz.

Was this also the game where you could beat players with the ball to get them off the base? (I believe this was for a later system though)

RedBarron

baseball simulator 1.000 is the game you speak of.

If you used teams of the ultra league, they special powers such as super jumps, tornado pitches, super bats, etc.

very fun game as it had stat tracking and roster editing capabilities.  It also had a few different stadiums to choose from.

Base Wars maybe?

Little League Baseball played pretty much exactly like Baseball Stars - I'm sure they were based on the same code, since they were made by the same company.

Baseball Simulator 1.000 had the most RBI-like gameplay of any non-RBI game I have played (apart from the Ultra Plays).  The computer opponent still sucks, but it's cool to be able to play seasons.

roger clemens mvp baseball had single player movement. however, you could throw ricky henderson (aka r. speed in the game) out at home from the wall when he was halfway there.

but little league baseball was fun, too. except for little leaguers, they barely (if ever? i don't remember) made errors.
